In this workshop, you’ll be guided by our master chef and learn the time-honored techniques of kneading, shaping, and baking bread in a traditional Berber clay oven. Once your bread is golden and ready, enjoy it warm, paired with a selection of local specialties, as you take part in a traditional Moroccan tea ceremony.

Our Chef

Mina

Mina is from the village of Aguelmous. When asked how she learned baking, she simply replied: “Mama.” It is now a skill that became second nature to her. She joined the owner of Bab Zouina forty years ago, helping with cleaning and cooking twice a week for his family. As guests began arriving, her role grew, shaping the heart of the kitchen. Though she later stepped back after surgery, she remains the beloved “grandmother of Bab Zouina.” Her favorite bread is the everyday Moroccan khobz lqamh (wheat bread), perfect for scooping up a flavorful tagine. And when it comes to tea, she loves mixing green tea with fresh herbs, especially verbena. Always full of humor, Mina never misses a chance to share a laugh.
