This workshop concludes with a hearty meal, where you can enjoy all the delicious Moroccan dishes you’ve prepared.

Aicha Aït Hammou

Aisha comes from Douar Sbiti. At only seven years old, she was sent to the city to work for another family, for whom she cooked. Years later, she found her way to Bab Zouina, taking on various roles—from gardening to cleaning—before becoming one of its cherished chefs. To this day, she prepares every dish with care and passion, especially her favorite: couscous.

Rachida Aït Taddarte

Rachida comes from the village of Aguelmous and started cooking at just 12 years old. She learned everything from her mother. At Bab Zouina, she found an opportunity to explore the potential of her cooking skills while staying close to home. As a dedicated single mother herself, she now brings warmth and authenticity to every dish she prepares. The rich and flavorful beef tagine with prunes and almonds is her go-to recipe for a true taste of Moroccan tradition.

Sana Aït Taddarte

Sana, from the village of Aguelmous, is a self-taught chef. With her mother as her teacher, she began cooking from a very early age. She perfected her skills over the years and eventually became a chef at Bab Zouina, where she now shares her love for traditional flavors with guests. Her favorite dish? The classic Moroccan couscous, a staple of warmth and hospitality.
